Marinade and Tofu

  • 1 cup Soy Vay® Veri Veri Teriyaki® Sauce
  • 1 package (14 oz) firm tofu

Main Bowl Components

  • 4 cups cooked rice noodles or spaghetti noodles
  • 1 cup sliced carrots
  • 1 cup snap peas
  • 1 cup pineapple chunks
  • 2 green scallions, thinly sliced
  • 1/4 cup Soy Vay® Veri Veri Teriyaki® Sauce (for topping)


Instructions

  1. Prepare Tofu: Cut the tofu into 1/4 inch slices and place on paper towels to dry out and drain for about 10 minutes to remove excess moisture.
  2. Marinate Tofu: Arrange the tofu slices in a shallow dish and pour 1 cup of Soy Vay® Veri Veri Teriyaki® Sauce over the tofu. Cover and refrigerate for 20-30 minutes to allow the tofu to absorb the flavors.
  3. Bake Tofu: Preheat the oven to 375°F (190°C). Remove the tofu from the marinade and place in a single layer on a baking sheet. Bake for 30 minutes, turning the slices once halfway through to ensure even cooking and caramelization.
  4. Assemble Bowls: Divide 1 cup of cooked noodles into each of the four bowls. Evenly distribute the sliced carrots, snap peas, pineapple chunks, baked tofu, and sliced scallions over the noodles. Drizzle each bowl with 1 tablespoon of Soy Vay® Veri Veri Teriyaki® Sauce for added flavor and serve immediately.
