Description

Peanut Butter Eggs are a delightful no-bake dessert featuring a creamy peanut butter and butter dough coated in rich melted chocolate. Perfect for Easter or any festive occasion, these homemade treats offer a delicious alternative to store-bought candy with a smooth, melt-in-your-mouth texture and a balanced sweet and salty flavor.

Ingredients

Scale

Peanut Butter Filling

  • 1 cup creamy peanut butter
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups powdered sugar

Chocolate Coating

  • 2 cups semisweet or milk chocolate chips
  • 1 tablespoon coconut oil or shortening (optional, for smoother coating)

Instructions

  1. Prepare the peanut butter mixture: In a large bowl, combine the creamy peanut butter, softened unsalted butter, vanilla extract, and salt. Mix thoroughly until the mixture becomes smooth and creamy.
  2. Add powdered sugar: Gradually incorporate the powdered sugar into the peanut butter mixture, stirring constantly until a thick dough forms that can be shaped by hand.
  3. Shape the eggs: Line a baking sheet with parchment paper. Scoop portions of the peanut butter dough and shape them with your hands into egg-like ovals. Place each shaped egg onto the lined baking sheet.
  4. Chill the shaped eggs: Refrigerate the peanut butter eggs for at least 30 minutes, or until firm enough to dip without losing shape.
  5. Melt the chocolate: In a microwave-safe bowl, combine the chocolate chips and coconut oil or shortening if using. Heat in 30-second intervals, stirring thoroughly between each, until the chocolate is completely melted and smooth.
  6. Coat the eggs: Dip each chilled peanut butter egg into the melted chocolate, ensuring it is fully coated. Use a fork or dipping tool to lift and lightly tap off excess chocolate before placing back on the parchment-lined sheet.
  7. Set the chocolate coating: Allow the chocolate to set by leaving the coated eggs at room temperature or refrigerating them until the chocolate hardens and is firm to the touch.

Notes

  • For a festive touch, decorate the tops with colorful sprinkles or drizzle some melted white chocolate over the eggs once coated.
  • Store the peanut butter eggs in an airtight container in the refrigerator for up to 2 weeks.
  • For longer storage, freeze the eggs; thaw in the refrigerator before serving.
