Description

A flavorful and creamy Jalapeno Popper Corn Salad combining the sweetness of corn with the spicy kick of jalapenos, savory bacon, and sharp cheddar cheese, all brought together with a smooth blend of cream cheese and sour cream. Perfect as a party side dish or a delicious snack.

Ingredients

Scale

Main Ingredients

  • 4 cups corn (fresh, frozen, or canned; drained if canned)
  • 1/2 cup chopped jalapenos (adjust to taste)
  • 6 slices bacon, cooked and crumbled
  • 4 oz cream cheese, softened
  • 1/2 cup sour cream or mayonnaise
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup diced red bell pepper
  • 1/4 cup sliced green onions
  • 2 tablespoons chopped fresh cilantro (optional)

Instructions

  1. Cook the bacon: Cook the bacon slices until they are crispy, then crumble them into small pieces and set aside for garnish and mix-in.
  2. Prepare the corn: If using fresh corn, grill or boil it until cooked and then allow it to cool. If using frozen corn, thaw it completely and drain any excess water. If using canned corn, rinse thoroughly and drain.
  3. Mix the creamy base: In a large bowl, combine the softened cream cheese with sour cream or mayonnaise. Stir until the mixture is smooth and well blended.
  4. Combine ingredients: Add the prepared corn, chopped jalapenos, diced red bell pepper, sliced green onions, shredded cheddar cheese, and most of the crumbled bacon to the creamy mixture.
  5. Mix well: Stir all ingredients together thoroughly to ensure an even coating and combined flavors throughout the salad.
  6. Chill: Cover the bowl and refrigerate the salad for at least 30 minutes to allow the flavors to meld and the salad to set slightly.
  7. Garnish and serve: Just before serving, sprinkle the remaining crumbled bacon, additional jalapeno slices, and fresh chopped cilantro over the top for color, texture, and extra flavor.

Notes

  • You can adjust the amount of jalapenos depending on your desired spice level.
  • For a vegetarian version, omit bacon and consider adding smoked paprika or a smoky vegetarian bacon alternative for flavor.
  • If you prefer, substitute sour cream with mayonnaise or Greek yogurt for a different creamy texture.
  • Make sure the cream cheese is softened to avoid lumps in the dressing.
  • This salad tastes best chilled but can be brought to room temperature before serving if preferred.
