Crust
- 3/4 cup graham cracker crumbs
- 3 tbsp melted butter
Cheesecake Filling
- 1 cup cottage cheese
- 1/3 cup unsweetened plain Greek yogurt
- 2 tbsp cream cheese
- 2 tbsp sugar-free maple syrup
- 1 egg
- 1 scoop PEScience Strawberry Cheesecake Protein Powder
Strawberry Sauce
- 3/4 cup frozen strawberries
Instructions
- Preheat Oven and Prepare Muffin Tin: Preheat your oven to 350°F (175°C). Line a muffin tin with muffin liners to prevent sticking and make removal easy.
- Make the Crust: In a blender or food processor, combine the graham cracker crumbs and melted butter. Blend until the mixture is well combined and crumbly. Press the mixture firmly into the bottom of each muffin liner to form the crust.
- Prepare Cheesecake Filling: Blend together cottage cheese, Greek yogurt, cream cheese, sugar-free maple syrup, egg, and PEScience Strawberry Cheesecake Protein Powder until the mixture is smooth and creamy.
- Fill and Bake: Pour the cheesecake mixture evenly over the prepared crusts in the muffin tin. Bake in the preheated oven for 38 to 41 minutes or until the cheesecake bites are set and no longer jiggly in the center.
- Make Strawberry Sauce: While the cheesecake bites bake, place frozen strawberries in a small saucepan over medium-low heat. Cook until the strawberries break down and form a sauce, stirring occasionally. Remove from heat and set aside.
- Cool and Chill: Allow the cheesecake bites to cool completely at room temperature. Once cooled, top each bite with the freshly made strawberry sauce. Refrigerate the cheesecake bites overnight for best texture and flavor before serving.
