  • 6 Tbsp. butter (room temperature, cut into cubes)
  • 1 ½ cups gluten-free 1-to-1 flour blend
  • ⅔ cup coconut sugar (or regular white sugar)
  • 1 ½ tsp. baking powder
  • ⅓ tsp. salt
  • ⅓ cup milk (cashew or almond milk)


Instructions

  1. Preheat oven: Preheat your oven to 375 °F (190 °C) to prepare for baking the cobbler.
  2. Prepare peach filling: In a large mixing bowl, combine the sliced peaches, ½ cup coconut sugar, cornstarch, lemon juice, cinnamon, nutmeg, and a pinch of salt. Toss well to coat the peaches evenly. Transfer this mixture into a greased baking dish, spreading it out evenly.
  3. Make biscuit topping: In another bowl, mix together the gluten-free flour blend, ⅔ cup coconut sugar, baking powder, and salt. Add the cubed butter and use your fingers or a pastry cutter to blend until the mixture resembles coarse crumbs. Pour in the milk and stir just until combined to form a soft dough.
