Scale
Main Ingredients
- 1 loaf English Muffin Bread or Pepperidge Farm Original White Bread
- 1 12-ounce tub reduced fat cream cheese spread
- 1½ cups chopped fresh chives
- 1 pound bacon (regular thickness)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil to ensure easy cleanup and to prevent sticking. Set the baking sheet aside for later.
- Prepare Bread: Cut the crusts off the bread slices carefully to create soft, uniform pieces that will roll easily.
- Spread Cream Cheese and Add Chives: Using a knife or offset spreader, spread a thin, even layer of the reduced fat cream cheese on each bread slice. Then sprinkle about ½ teaspoon of chopped fresh chives evenly over the cream cheese layer.
- Roll and Wrap with Bacon: Starting at one end of each slice, roll the bread tightly into a cylinder, ensuring the cream cheese and chives are contained inside. Take a slice of regular thickness bacon and wrap it around each rolled bread cylinder in a spiral fashion to cover the entire outside surface. Once wrapped, use kitchen shears to cut each cylinder in half to create smaller bite-sized pieces.
- Bake: Place the bacon-wrapped bread pieces on the prepared baking sheet. Bake in the preheated oven for about 20 to 30 minutes, or until the bacon is crispy and fully cooked through. Serve the bacon bites warm for the best flavor and texture.
Notes
- Using regular thickness bacon is important to ensure it crisps properly around the bread without overcooking or undercooking.
- For easier rolling, slightly flatten the bread slices with your hands before spreading the cream cheese.
- Feel free to experiment with flavored cream cheeses or add a sprinkle of black pepper for extra zest.
- These bites can be made ahead of time and reheated in the oven to maintain crispiness.
