Ingredients
Scale
Fruit Mixture
- 4 cups fresh or frozen fruit (such as peaches, blackberries, or a mix)
- ¾ cup granulated sugar, divided
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
Batter
- 1 cup all-purpose flour
- 1½ teaspoons baking powder
- ¼ teaspoon salt
- 1 cup whole milk
- ½ cup unsalted butter, melted
- 1 tablespoon coarse sugar or cinnamon sugar (optional, for topping)
Instructions
- Prep the Fruit: In a large bowl, toss the 4 cups of fresh or thawed fruit with ¼ cup of the granulated sugar, 1 tablespoon lemon juice, and 1 teaspoon vanilla extract. Set this mixture aside to macerate and develop flavor.
- Make the Batter: In a separate bowl, whisk together 1 cup all-purpose flour, the remaining ½ cup granulated sugar, 1½ teaspoons baking powder, and ¼ teaspoon salt. Gradually stir in 1 cup whole milk until just combined, being careful not to overmix to keep the batter light.
- Prepare the Baking Dish: Pour ½ cup melted unsalted butter into the bottom of a 9×13-inch baking dish, ensuring an even layer covering the base.
- Assemble the Cobbler: Pour the batter evenly over the melted butter in the dish, but do not stir. Then spoon the fruit mixture evenly on top of the batter, again without mixing. The batter will rise up around the fruit during baking.
- Add Topping (Optional): Sprinkle 1 tablespoon of coarse sugar or cinnamon sugar on top for an added crunch and flavor boost.
- Bake: Place the dish in a preheated oven at 350°F (175°C) and bake for 45 to 50 minutes, or until the cobbler is golden brown on top and bubbling around the edges.
- Cool and Serve: Let the cobbler cool slightly before serving. For an authentic Southern experience, serve warm with vanilla ice cream or whipped cream.
Notes
- This cobbler is versatile and works well with peaches, berries, cherries, or apples.
- If using frozen fruit, be sure to thaw and drain any excess liquid before assembling to avoid a soggy cobbler.
- Serving warm with vanilla ice cream or whipped cream enhances its classic Southern appeal.
