Blueberry Sauce
- ½ cup fresh blueberries
- 2 tablespoons honey (or sugar, or pure maple syrup)
- 1 teaspoon freshly squeezed lemon juice
- ½ teaspoon vanilla extract
- Pinch of salt

- 8 ounces goat cheese log (cut into 6 pieces)
Instructions
- Make Blueberry Sauce: Add blueberries and honey (or your choice of sweetener) to a medium-sized bowl. Microwave for 30-60 seconds until the blueberries start to expand and some burst. Mash the berries using a slotted metal spoon or potato masher until a thick sauce forms. Stir in lemon juice, vanilla extract, and a pinch of salt. Place the sauce in the freezer for 15-20 minutes until it cools completely.
- Mix Goat Cheese: Cut the goat cheese into 6 pieces. Stir the pieces gently into the cooled blueberry sauce until just combined—you want the mixture to remain a bit clumpy with larger chunks of goat cheese. If needed, return the mixture to the freezer for another 15 minutes to firm up.
- Form into Log: Place two 15-inch long pieces of plastic wrap on a flat surface intersecting to form a plus sign. Lay one piece vertically and the other horizontally. Spoon the blueberry goat cheese mixture into the center of the horizontal wrap in a log shape. Wrap carefully with the horizontal plastic wrap, shaping and reinforcing the log, then wrap again with the vertical plastic wrap. Twist the ends to seal securely.
- Chill: Refrigerate the wrapped log for 2-4 hours, or freeze for 30-45 minutes until firm. Before serving, allow the log to return to room temperature. Serve with crackers and enjoy this elegant, fruity, and creamy cheese appetizer.

- Using fresh blueberries gives the best flavor, but frozen blueberries can be used if thawed first.
